Friday lunch: Cauliflower soup with hamburger “croutons”

Ingredients

leftover cauliflower (see Wednesday)
leftover hamburgers (see Tuesday)
water/organic coconut milk/other organic dairy-free milk
salt and pepper

Cauliflower and hamburger

Take out the cauliflower mixture from the fridge and pour it into a large pot. Little by little add either coconut milk or other dairy-free milk, until reaching a quite thick, creamy consistency. Use water instead if you want a lighter result. Heat up the soup on the stove and try it for salt and pepper.

Heat up the leftover hamburger in the microwave oven. Subsequently, cut it up in 1/2 inch / 1 cm cubes. Pour soup into bowls, top with hamburger croutons and serve with salty crackers.
