organic tomato pasta sauce
any leftover you might have from the week (chicken, salmon, tomato/lentil/veggie mixture, hamburger…), cut up in small pieces
chopped up, steamed organic kale or spinach
organic tomato slices
organic Vegenaise (cheese substitute)

Preheat the oven to 400 F / 200 C. Use a knife to remove edges from the bread. Put slices of bread on an oven tray covered in parchment paper. Flatten the bread a bit with the palm of your hand or rolling pin. Add a layer of tomato/pasta sauce and the toppings of your choice. End with a layer of Veganaise, which will act as a cheese substitute, along with salt and pepper. Bake in the oven for 10 – 15 minutes or until warm. Serve with a salad or your choice of fresh vegetable.
Preparation for next day’s meals
Take out Wednesday’s leftover salmon and Sunday’s leftover chicken from freezer and keep in the fridge, to be used in Saturday’s lunch and dinner, respectively.
